Steps 1 & 2

We started making these the day after making our BBQ Pulled Pork. We always have so much leftover, and it makes for some choice breakfast tacos.

Get started by tossing the pork in the skillet and turn it on low. Cover to heat as slowly as possible.

Then lay out all of the ingredients, and get everything diced up. Dice the onion as small as possible for best results.

Steps 3 & 4

Fry up some tortillas and when close to finishing all of them start your eggs. You’ll want to make sure you time everything well so that your eggs aren’t cold when you go to serve up some plates.

I would suggest frying the tortillas and put them on a plate and cover as they are coming out. This way they will retain most of the heat until you have all of them ready.

I prefer the eggs to be right in between over-medium and over-hard. This way they are not too runny, but just enough to coat some of the toppings.

Step 5

Start to build your pulled pork tacos! Layer them how you like, but my recommendation for this is in the recipe. Cover with your favorite hot sauce and enjoy.

Experiment with a handheld Mexican pizza, by over-frying some tortillas. This will make them rigid enough to hold flat.

Authentic Pork Tacos

Breakfast Pulled Pork Tacos

Quick 2 person breakfast using leftover pulled pork. Double ingredients if you have guests. Actual pulled pork receipe will be linked in this article.

Equipment

  • 1 Large Skillet For frying tortillas
  • 1 Medium Skilled For cooking eggs
  • 1 Skillet & Lid To reheat pulled pork (unless you use microwaves)

Ingredients
  

  • 1 lb Pulled Pork
  • ½ md Avocado
  • 1 sm Onion Red onion used for this recipe
  • 1 Jalapeno
  • ½ cup Cilantro
  • 4-6 Corn Tortillas
  • 2 lg Farm Fresh Eggs
  • 1 tbsp Avocado Oil Any oil with a high smoke point will work
  • Your Favorite Hot Sauces
  • Salt and Pepper

Instructions
 

  • Put leftover pulled pork in a skillet on low heat and cover. Stirring occasionally.
    1 lb Pulled Pork
  • Next dice up onion, jalapeno, avocado, and cilantro.
    ½ md Avocado, 1 sm Onion, 1 Jalapeno, ½ cup Cilantro
  • Over medium-high heat, splash some avocado oil into the skillet. Just enough to coat the bottom lightly. Add the corn tortillas and instantly move them around and flip them so boh sides of the tortilla absorb some of the oil. Fry the corn tortillas in avocado oil for about 1-2 min per side. You should be able to fry 2 at a time, depending on the size of your skillet. As they are finished stack on a small plate and cover so they stay warm. Unless your ready to serve, then get after it.
    4-6 Corn Tortillas, 1 tbsp Avocado Oil
  • While you are frying tortillas heat the other skillet up to high for the eggs. Add a little oil and crack in some eggs. Cook them how you prefer. Over-medium or over-hard is recommended for this recipe.
    2 lg Farm Fresh Eggs
  • Start building some tacos. Recommended layering is Tort > Pork > Onion > Jala > Egg > Avo > Cilantro > Saas

Notes

  • For a little flavor squeeze some lime on these bitches.
  • Get crazy and build a Mexican pizza by frying 2 tortillas longer, so they are hard. Then build a handheld as shown in the images above.
